This Santoku kitchen knife is a rare example of the author's solution for the classic Santoku knife.
It is a universal chef knife, with double-sided sharpening and a shorter, wider blade. It's equally good for vegetables, fish and meat. The light weight of the blade provides maximum ease of use, which is suitable for both men and women.
The blade is made of hand forged set steel, with a zone hardened working edge, which makes it strong and has a long lasting ability to hold the sharpening (Kirenaga).
- The handle is made of Stabilized Maple Birch and Mammoth Molar Tooth.
The shape of the handle is classic European style.
Installation of the blade is horsed deaf "Narrow Tang".
